Banana Bread w/ Streusel-Nut Topping

My parents brought over a bunch of extremely rip bananas today. I thought it would be a great surprise for Chris if I made him some banana bread to celebrate the first day in his new position at work.
I get a Gold Star for being an awesome wife today! ;)

I'm not sure where I got this recipe from exactly since I've had it in my family cook book for awhile. I just know it's amazing!

**I didn't have any walnuts on hand so the loaf in the pics has no walnuts in it**

Banana Bread w/ Streusel-Nut Topping Recipe:

Bread Ingredients:
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 eggs, beaten
  • 1 1/2 cups lightly mashed ripe bananas (5 medium)
  • 1 cup sugar
  • 1/2 cup cooking oil or melted butter or margarine
  • 1/4 cup chopped walnuts (optional)
Preheat oven to 350 degrees. Grease bottom of 1/2-inch up the sides of one 9x5x3-inch or two 7.5x3.5x2-inch loaf pans; set aside.
In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in center of flour mixture; set aside.
In a medium bowl combine eggs, bananas, sugar, and oil.
Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in walnuts. Spoon batter into prepared pan(s).
I desire, sprinkle Streusel-Nut Topping over batter in pan(s).
Bake for 55-60 minutes for 9x5x3-inch pan or 40-45 minutes for 7.5x3.5x2-inch pans or until a wooden toothpick inserted near center comes out clean (in necessary, cover loosely with foil the last 15minutes of baking to prevent over browning).
Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely  on rack.
Wrap; store overnight before slicing.

Streusel-Nut Topping Ingredients:
  • 1/4 cup packed brown sugar
  • 3 Tbs all-purpose flour
  • 2 Tbs butter
  • 1/3 cup chopped walnuts
In a small bowl combine brown sugar and flour. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in chopped walnuts.
