Strawberry Pancakes

These pancakes are a family favorite! What really makes them yummy is the topping. You can use any berry you like for this recipe, fresh or frozen.
1 cup fresh or frozen Strawberries (I used frozen)
1/2 cup pure maple syrup
1 cup all-purpose flour
1/2 cup whole wheat flour or white (I used wheat)
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup whole milk (or your preference)
2 large eggs
4 teaspoons unsalted butter, melted, plus more for cooking
1 teaspoon vanilla extract
  • In a saucepan over medium heat, combine the strawberries and maple syrup and bring to a simmer, then remove fro the heat. Use a fork to smash up the strawberries.
  • In a large bowl, stir together the flour, sugar, baking powder, and salt. In another bowl, whisk together the milk, eggs, melted butter, and vanilla. Add the flour mixture and stir until combined.
  • Heat a large frying pan over medium heat and add 1 teaspoon butter. When butter melts spread it evenly over the bottom of the pan. Use a 1/3 cup pour batter into the to form pancakes. Cook until the edges are set and the tops are covered with bubbles, about 2 minutes. Flip the pancakes and cook until golden. Repeat with the remaining batter.
  • Serve with drizzled strawberry syrup.
