Elisabeth came over to make some snacks from the Shaklee 180 Smoothee protein mixes with me. I have become dependent on their meal bars and snack bars lately since Grayson was born. I have a bunch of smoothee mixes that I need to use before I stock up on more bars.
We made 3 different snacks and the Vanilla Carrot Cake Protein Squares were my favorite. I may have to have these every day. I had to stop myself from eating the whole batch in one sitting!
1 cup Cashews
1/2 cup Pecans
3/4 cup Oats
1/2 cup Unsweetened Applesauce
1 1/2 scoops Shaklee 180 Vanilla Smoothee Mix
1 tsp Pumpkin Pie Spice
Handful of Baby Carrots
Combine all ingredients in a food processor until roughly chopped. Spread in a 9x9 square pan.
Place in refrigerator to set up.
1/3 cup shredded Coconut or
Melted White Chocolate
Sprinkle the coconut on top of the squares or melt white chocolate and drizzle over top.
Cut into squares.
