These pancakes are a family favorite! What really makes them yummy is the topping. You can use any berry you like for this recipe, fresh or frozen.
Ingredients:
1 cup fresh or frozen Strawberries (I used frozen)
1/2 cup pure maple syrup
1 cup all-purpose flour
1/2 cup whole wheat flour or white (I used wheat)
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup whole milk (or your preference)
2 large eggs
4 teaspoons unsalted butter, melted, plus more for cooking
1 teaspoon vanilla extract
Directions:
- In a saucepan over medium heat, combine the strawberries and maple syrup and bring to a simmer, then remove fro the heat. Use a fork to smash up the strawberries.
- In a large bowl, stir together the flour, sugar, baking powder, and salt. In another bowl, whisk together the milk, eggs, melted butter, and vanilla. Add the flour mixture and stir until combined.
- Heat a large frying pan over medium heat and add 1 teaspoon butter. When butter melts spread it evenly over the bottom of the pan. Use a 1/3 cup pour batter into the to form pancakes. Cook until the edges are set and the tops are covered with bubbles, about 2 minutes. Flip the pancakes and cook until golden. Repeat with the remaining batter.
- Serve with drizzled strawberry syrup.

Dining Room Make Over
We bought our house at the end of April this year and we finally have one room finished!
Yes, I know what you're thinking. "That is 7 months and you only have one room done?!"
Well, in our defense we bought a foreclosure that needed a lot of work on the outside. The whole summer was spent staining the exterior, removing dead tree's and bushes, fixing the roof, repairing the driveway, getting rid of the weeds that were acting like grass and so on. The outside isn't completely done just yet. We have more to do next summer so when that is all done then I'll have pics for ya.
Here are the before pictures of the dining room. The bank primed all the walls in this house which is awesome! Yes, it's boring and marks easily but when we are ready to paint it'll be a breeze!
The Before:
The door way leads to the kitchen.
We have huge windows in here and another doorway that leads to
the foyer.
The After:
If you have questions about our space just ask in the comments!

This is a new recipe we tried this summer and it's a keeper!
The grilled oranges add a nice surprise to these skewers.
I found this recipe for Sweet & Spicy Peanut Chicken HERE.
Ingredients:
- Boneless Chicken Breasts, cut into 2 inch cubes
- 1 jar of Trader Joe's Spicy Peanut Dressing
- 1 can of Pineapple chunks
- 2 Green Bell Peppers, cut into 1 1/2 inch pieces
- 2 or 3 Oranges cut into approximately 6 slices (keep peel on)
- 2 Red Onions, sliced into large chunks
- skewers
Preheat grill to 375 degrees. Put cut chicken pieces in a bowl and the cut veggies and fruit into another bowl. Fill each bowl with half the bottle of spicy peanut dressing. Let marinate for at least 20 minutes, though preferably overnight. Soak skewers in water while ingredients are marinating. When ready assemble ingredients on skewer in the following order: green pepper, onion chunk, pineapple slice, chicken piece, orange slice (skew through the skin), pineapple slice, chicken piece. Repeat until skewer is filled (not too tightly). Grill for 12-15 minutes (turning skewer at 6 min). Chicken is done once it reaches an internal temperature of 165 degrees.
